In this third episode of Healthy Travels with Dr Rupy in Penang, we’re trying Nasi Lemak!
We headed here to try the authentic version, before creating an inspired dish in our studio kitchen

Coconut Rice Bowl
Serves 1
75g cooked Short grain brown rice or mixed wholegrain rice
75g green beans, cooked
50g cucumber, sliced
20g Peanuts, gently toasted
1 Egg, hard boiled
1 tbsp Sambal paste
10g spring onions, finely sliced
50g greens
20g bean sprouts
10g crispy fried onions
1 tbsp sesame oil
You can cook the rice in boiling water with some pandan leaf.
Assemble the rice in the middle of a shallow bowl.
Decorate the ingredients around the rice and enjoy.
