Recipe is below:

BEIJING PORK CHOPS RECIPE 北京猪排食谱

2 to 3 pork chops cut up
2 to 3 tablespoons cornstarch
4 to 5 tablespoons cooking oil or more

Cut pork chops into smaller pieces approx. 2 inch by 2 inch. Coat the chicken with the cornstarch . Pre heat the pan at medium heat. Put in 3 or 4 tablespoons cooking oil.
When oil is hot, lay down the piecesof pork chop. Grill pork chops for about 5 or 6 minutes each side. Turn over pork chops for even cooking. Add more cooking oil if required. When pork chops are cooked, take them off and put on a plate.

TO MAKE THE SAUCE:

1 cup water or more
2 to 3 tablespoons peanut oil (or other cooking oil)
1 tablespoon sliced ginger
1 tablespoon chopped garlic
1/2 teaspoon salt
1 to 2 tablespoons light soy sauce
3 tablespoons brown sugar or other sugar
2 tablespoons ketchup or tomato sauce
1 tablespoon HP sauce (or Worcestershire sauce)
1 teaspoon beet powder
1 cup onions sliced
1/2 cup green pepper sliced
1 tablespoon cornstarch in 1/4 cup water for slurry

Preheat a wok or pan at medium heat. Add cooking oil. Add ginger and garlic and stir fry briefly. Add onions and briefly stir fry. Add 1 cup or more water, depending on how much sauce you like. Add salt, sugar, vinegar, ketchup or tomato sauce, HP sauce and red beet powder. Bring sauce to a boil. Mix cornstarch in water for slurry and add to thicken the sauce. Just before serving, add pork chops into the sauce and mix well. Serve on a nice plate. Enjoy!

If you have a carbon steel wok, make the sauce in another pan. Vinegar in this sauce recipe will strip the carbon coating in a carbon steel wok.
