Craving a vibrant Thai dish that’s as beautiful as it is delicious? Try this Southern Thai Rice Salad – Khao Yum! 🌈 A stunning mix of blue rice, punchy fermented dressing, and a rainbow of fresh herbs, veg, and toppings like toasted coconut and prawn floss.
This dish hits every flavour note: sweet, salty, sour, spicy and umami – and looks like a piece of art on your plate.
Ingredients:
Blue Rice:
1 cup jasmine rice
Butterfly pea flowers (or purple cabbage, for colour)
Water
Dressing (Nam Budoo-style):
1 tbsp fermented fish sauce or shrimp paste
1 tsp tamarind paste
1–2 bird’s eye chillies (adjust for heat)
Palm sugar to taste
Lime juice to balance
Veg & Herbs:
Long beans, finely chopped
Carrot, grated
Red cabbage, shredded
Lemongrass, finely sliced
Kaffir lime leaves, finely shredded
Coriander
Thai basil (optional)
Toppings:
Toasted coconut
Fried shallots
Prawn floss (or crushed dried shrimp)
Cooked protein (optional – prawn, chicken or tofu)
