BEEF WITH RICE NOODLE STIR FRY 干炒牛河
Add beef or other meat. See what vegetables you have in the fridge. Add some tasty sauces and you have a tasty, delicious dish to impress your family and friends anytime.
dry rice stick noodles (227 grams or 1/2 lb.)
4 to 6 oz. sliced beef
3 tbsp. cooking oil + 1 tbsp. cooking oil + 3 tbsp. cooking oil
1 tablespoon chopped ginger and garlic (optional)
1/2 cup sliced onions
1 teaspoon salt (boiling water) + 1 teaspoon or less salt
1 tablespoon sesame oil
1 to 2 tablespoons light soy sauce
1 to 3 tablespoons dark soy sauce
To marinate the beef, see ingredients below.
COOKING PACKAGED RICE NOODLE STICKS
Bring a pot of water to boil. Add 1 teaspoon salt. Put dry rice stick noodles in water. Boil noodlesfor 6 minutes, or according to instructions. For firmer noodles, boil less minutes. Be sure to stir noodles, so they don’t stick together. Rinse noodles in cold water, also to prevent sticking.
MARINATING THE BEEF (ALSO KNOWN AS VELVETING)
Slice beef to size that you like. For this recipe, we can use flank steak, chuck steak, blade steak or sirloin steak. Marinate the beef in cooking oil such as peanut oil, cornstarch, light soy sauce, dark soy sauce and sesame oil and salt. Marinating is also known as “velveting” in Chinese cooking.
Marinading the beef is optional. Using more expensive cuts of beef such as New York steak will not need marinating.
COOKING INSTRUCTION
Pre heat a wok or pan at medium heat. Add 3 tablespoons cooking oil. Add ginger and garlic. Stir fry briefly and push to the side. Add onions and briefly stir fry. Turn heat setting to high. Add beef and let sear briefly.
Add more oil to wok. Add rice noodles and briefly sear and stir fry. Add bean sprouts. Also add light soy sauce, dark soy sauce and sesame oil. Do final stir fry. Serve on a nice plate. Enjoy!
