CHICKEN And BROCCOLI STIR FRY
1 chicken breast, sliced
3 to 4 cup broccoli crown and stalks
1 tablespoon sliced ginger
3 cloves garlic, smashed
1/2 onion, sliced
3 tablespoons cooking oil + 1 tablespoon cooking oil
TO MARINATE CHICKEN
1 tablespoon cornstarch
3 to 4 tablespoons light soy sauce
1 tablespoons Chinese oyster sauce
3 to 4 tablespoons cooking oil (avocado oil or peanut oil)
1 tablespoon dark soy sauce (optional)
In a large mixing bowl, put 4 to 8 oz. chicken breast. Add cornstarch, light soy sauce, Chinese oyster sauce and cooking oil. Mix well with chopsticks or a fork. Optional, add dark soy sauce for darker color. Cover with a lid or cellophane and put in fridge for at least 2 hours, or preferably overnight.
TO SLICED BROCCOLI AND VEGETABLES:
Cut off the crown at the stalk. Cut crown into individual floret. Cut of the outer layer from the stalk pieces. Cut stalk at an angle into slices. Cut outer layer from ginger, slice and smash pieces. Smash 3 cloves garlic and remove skin. Cut off ends from the garlic. Cut 1/2 onion into medium size pieces.
TO STIR FRY:
Preheat a wok at medium to medium high heat. Add 3 tablespoons cooking oil. Add ginger and garlic. Briefly stir fry. Add onions and continue to stir fry briefly.
Turn heat setting to high. Add chicken and stir fry until about 75 percent cooked. Take chicken off and put on a plate.
If using a carbon steel wok, cleaning is not required. Add more cooking oil if required. Turn heat to high setting. Add broccoli to wok. For faster cooking boil broccoli 2 to 3 minutes and dry in a strainer, before putting into the wok. Briefly stir fry for about 2 to 3 minutes, or until desired tenderness. Add the chicken back into the wok. Do final stir fry. Serve with hot steaming rice, if you like. Enjoy!
