Filthy Fast vs Healthy At Home Big Bad Breakfast Sandwiches

All my years in the food industry, I’ve learned: people don’t line up for salads. They crave flavor. In this video, I take inspiration from one of my new favorite Austin spots, Mission Burger, and show you how to make the ultimate plant-based breakfast sandwich two ways.

Healthier Big Breakfast Sandwich
Serves 2
Ingredients
• 1 block firm tofu (454 g), sliced in half lengthwise
• 2 portobello mushrooms
• 2 soft buns or English muffins
• 2 slices vegan cheese (optional)
• 2 Tbsp vegan butter (optional)
• 1 tsp fennel seeds
• 1 tsp smoked paprika
• 1 tsp black pepper
• ½ tsp chili flakes
• ½ tsp salt
• ½ tsp granulated onion
• ½ tsp black salt (Kala Namak)
Method
1. Toast the buns: Split buns or English muffins, spread with butter if using, and griddle until golden. Set aside.
2. Make the sausage seasoning: Grind fennel, smoked paprika, chili flakes, and salt in a mortar and pestle.
3. Cook the mushrooms: Heat a cast iron skillet with a light film of oil. Sear mushrooms 2 minutes per side until softened. Transfer to a bowl, toss with the seasoning mix, then return to the skillet and sear again until fragrant.
4. Cook the tofu: In the same pan, sear tofu slices 2–3 minutes per side until golden. Sprinkle with granulated onion and black salt. If using, add cheese and cover briefly to melt.
5. Assemble: Layer tofu onto the toasted buns, top with the seasoned mushrooms, and serve hot.
Dirty Guilty Pleasure Breakfast Sandwich
Serves 2
Ingredients
• 2 plant-based sausage patties (Impossible, Beyond, or similar)
• 2 frozen hash brown patties
• ½ box Just Egg (about 1 cup)
• 2 slices vegan cheese
• 2 soft burger buns
• 2 Tbsp vegan butter
• ½–1 cup vegan mayonnaise
• 2–3 Tbsp hot sauce (your favorite brand)
• Salt & black pepper, to taste
• Oil, for frying
Method
1. Toast the buns: Spread with butter and griddle until golden brown. Set aside.
2. Cook the sausage: Form plant-based meat into thin patties if needed. Fry in a little oil until browned and crisp on both sides.
3. Cook the hash browns: In the same pan, fry frozen hash browns until golden and crispy, adding extra oil as needed.
4. Make the eggs: In a buttered skillet, scramble Just Egg with salt and pepper until fluffy. Top with vegan cheese, cover briefly to melt.
5. Make the sauce: Stir hot sauce into mayo until creamy and spicy.
6. Assemble: Spread sauce on buns → layer with hash brown → sausage patty → cheesy scrambled Just Egg → more sauce on top bun. Serve hot and messy
