This Chicken and Potato Stir-Fry Will Surprise You!

Chicken and Potato Stir-fry is such a delicious and comforting Chinese dish. It is one of Ray’s favorite dishes since he loves both chicken and potato 🙂 Stir fried potatoes is a very popular Chinese dish, normally vegetarian. Tender chicken and Crispy potatoes are a perfect combination, so easy to make with simple ingredients everyone can find. You may use other protein like pork of your choice. Enjoy!
Here are my other stir fried potatoes recipes:
Ingredients:
1 chicken breast, about 10 oz, cut into slivers
1 potato, shredded and rinsed
4 cloves garlic, sliced
1/2 bell pepper, sliced
a few cut-up dried chiles (optional)
salt
white pepper
light soy sauce
potato or corn starch
water
avocado or vegetable oil
For the sauce:
peanut butter
hoisin sauce (or soy sauce)
rice vinegar
warm water
Written recipe for Summer Rolls:
1. Heat up 1 tbsp oil on high heat, and stir fry the chicken about a few minutes or till it’s lightly brown. Set aside.
2. Add more oil and sauté garlic and chiles for 10 seconds. Stir fry bell pepper about 1 minute. Add a bit salt.
3. Add potatoes and stir fry for a few minutes till lightly brown. Add some salt.
4. Combine with chicken and stir fry for another minute. Finish with light soy sauce. Serve!
