If you prefer beef, here’s my pepper steak recipe:
Ingredients:
1 chicken breast (about 12 oz), sliced thinly
3 sweet peppers, sliced
2 cloves garlic, sliced
5 slices of ginger
salt
black pepper
light soy sauce
dark soy sauce (optional for the color)
avocado oil
Written recipe for Pepper Chicken:
1. Trim any excess fat from the chicken breast. Cut the breast in half horizontally, then slice it thinly. Place the chicken in a bowl and season with a little salt, light soy sauce, black pepper. Mix well. Add about 1 tablespoon of oil and mix again. The oil helps keep the chicken slices from sticking together while cooking.
2. Heat a dry wok or large skillet over medium heat. Add the peppers without any oil. Pan roast for about 4 minutes, stirring and turning occasionally, until the peppers develop dark, charred spots and become fragrant. Season with a small pinch of salt. Remove the roasted peppers from the pan and set aside.
3. Heat the wok or skillet over high heat and add a little cooking oil. Add the chicken in a single layer and let it sit undisturbed for several seconds so it can sear before stirring. Stir-fry for about 2–3 minutes, until the chicken is lightly browned and cooked through.
4. Add the sliced ginger and garlic. Stir-fry for several seconds until fragrant.
5. Return the roasted peppers to the wok. Add a little light soy sauce to taste. If desired, add a small splash of dark soy sauce for additional color. Stir everything together over high heat for another minute or so. Taste and adjust the seasoning.
6. Finish with plenty of freshly ground black pepper. Serve (with steamed rice of your favorite side dishes).
