Homemade gifts over store-bought gifts
And because I just can’t show up empty handed…
Instead of purchasing gifts that someone may not need or use, I love giving homemade gifts. Especially food and homemade snacks since they hardly go to waste and add no clutter 🎁😉
Here’s what I made:
🧀Goldfish Crackers
🌈Sprinkles
🍫Granola Bars
🧀 Gold Fish Crackers:
1½ cups sharp cheddar (shredded)
1 cup organic all-purpose flour
1½ tsp arrowroot powder
¼ tsp sea salt
6 Tbsp cold unsalted grass-fed butter
2 Tbsp cold water
📝Blend cheese, flour, arrowroot + salt in food processor. Add butter, pulse to crumbs. Add water, pulse to form dough. Chill 45 mins. Roll out, cut shapes, transfer to a lined baking sheet. Bake at 350°F for 13-15 mins until golden + crisp.
🌈Coconut Rainbow Sprinkles
½ cup unsweetened shredded coconut
½ -1 tsp natural food powder: 🩷 Pink/red: Beetroot or dragonfruit powder; 💛Yellow/orange: Turmeric powder; 💚 Green: Green Spirulina (use a Hawaiian brand as they aren’t fishy tasting); 💙Purple/blue: Blueberry powder or Blue Spirulina; 🤎 Brown: Cocoa powder
1 tsp water (just enough to lightly dampen, not soaking wet)
Optional: a drop of vanilla extract and/or liquid stevia for flavour
📝 Preheat the oven to lowest setting (175°F of lower). If your oven doesn’t go that low, prop the door open slightly with a wooden spoon and use “fan off” setting.
In a small bowl, combine coconut, natural food powder; mix throughly until evenly coated. Let sit for a minute to absorb. Line baking sheet with parchment paper or silicone mat. Spread thin, even layer of coloured coconut. Break up any clumps with a fork. Repeat for other colours on separate sections or trays. Place in the oven for 30-60 minutes until fully dried. Stir every 20–30 minutes with a fork to ensure even drying and break up clumps. Check frequently near end. They’re done when fully dry and crisp. Do not let them brown or burn. Remove from the oven; let cool completely on tray. Store in airtight jar or container at room temperature 4-6 weeks. Sprinkle on ice cream, yogurt, chocolate pudding, smoothie bowls, etc.
🍫Chewy Chocolate Chip Granola Bars
Ingredients (makes 12 bars)
2 cups rolled oats
1 cup crispy brown rice cereal
¼ cup unsalted butter
¼ cup coconut sugar
¼ cup honey
¼ cup hemp hearts
1 tbsp ground flaxseed
2 tsp vanilla extract
½ tsp cinnamon
¼ tsp sea salt
⅓ cup mini chocolate chips (dairy-free if needed).
📝Preheat oven to 350°F. Spread oats on a baking sheet and toast 10-15 mins until lightly golden, stirring once. Let cool slightly, then pulse in a food processor for 10 seconds to break them up. In a saucepan over low heat, melt butter, coconut sugar, honey and vanilla and bring to a simmer and stir until smooth. In a large bowl, mix pulsed oats, cereal, hemp hearts, cinnamon, sea salt and flaxseed with the warm caramel like mixture until evenly coated. Line an 9×9 pan with parchment. Press mixture firmly and evenly into the pan. Sprinkle mini chocolate chips on top, pressing them gently into the surface. Refrigerate 1–2 hrs. Bring to room temp before slicing into bars so they don’t crumble.
